Playing with Fire
I made the pumpkin spice bars, and I ate one. Or six. I forget. The picture below is the actual result of my efforts. Not bad. I took them to work to ensure they wouldn't all be cluttering up my belly. People seem to like them.
This recipe calls for a 15-oz. can of pure pumpkin and one box of spice cake mix. Stir it all together and bake in a greased (or Pammed, in my case) 13x9 in. cake pan at 350 for 38 minutes. Couldn't be simpler, and they turned out...okay. A friend suggested adding raisins to the mix, which I think is a great idea. The one thing I didn't like about working with the pumpkin was the sticky factor. It finally occurred to me after I had wrestled the batter into the pan (not an easy task) that Pamming the spatula would have helped. Live and learn.
Thank you to those of you who offered additional pumpkin recipes. I may try a pumpkin smoothie at some point. I've also heard of just stirring yogurt and pumpkin together for a treat.
You might think that pumpkin bars were enough kitchen excitement for one night, but the fun didn't stop there. I didn't exactly "cook" my dinner, but it did involve reheating and stirring and, you know, multiple ingredients. To me, that's cooking.
My other culinary masterpiece was a healthy barbecue sandwich with coleslaw. I had some leftover barbecued pork loin from the weekend, and I wanted to make a sandwich with it. Unfortunately, I also love coleslaw on my bbq, but it's so calorific that I usually avoid it. It's just not a barbecue sandwich without coleslaw! It occurred to me on my way home from work that I could make my own coleslaw. Imagine that! So I stirred up some shredded cabbage, carrots, Light Miracle Whip (just a dab), mustard, celery seed, and fresh-cracked black pepper--voila!--healthy coleslaw! I had about a cup of it for 30-40 calories and loads of healthy fiber. (I'll be having it again this weekend with turkey dogs.)
Since I didn't have any sandwich buns, I used whole wheat hot dog buns for assembling my masterpiece, thus inventing The 'Cue Dog. (I had already invented The BBQ Taco and The 'Cue-rrito several years ago.) I tugged some of the "inside bread" out and filled the hole with coleslaw. Then a layer of meat, a layer of bbq sauce, and I was set. I wish I had thought to take a picture of it, because it was delicious!
All that cooking wore me out, and I went to bed early. :) It could've been the 11 flights of stairs I walked yesterday or the 2 miles I walked after that, but my money's on the extensive-for-me kitchen work. :)

I've made the pumpkin/spice cake recipe only the one I got called for putting them in mini muffin pans. Yes they were stiky and I loved the taste but they were way too dry for me (had to gag it down) and I only ate one before heaving the rest over the mountain. Wonder if it would help if I added some water?
Way to go on the cooking "Cammy homemaker." I'll have to try your recipe for cole slaw. I too love it on my BBQ.
Yum, Yum! I love pumpkin but I don't eat it unless it is November thru February. Strange how my appetite cravings follows the seasons. :)

Oh, girlie, I am a pumpkin FIEND. I've tried nearly anything pumpkin-flavored you can think of and love it all - your bars look great! I definitely recommend the pumpkin and yogurt mix (plus lots of cinnamon, another flavor I go nuts for)- I like the Fage Greek-style yogurt best, since it's so much thicker and creamier than regular yogurt.
Congrats on the 'Q & slaw masterpieces as well! They sound de-lish.
I'm going to try the pumpkin spice recipe with the raisins, sounds delish! I use the same recipe for the coleslaw. I add a little vinegar to it cause I love the bite! Even better if you let it sit for an hour!

I make my own cole slaw too and found I like the angel hair shred the best and a teaspoon of white vinegar to the mix really gives it that tangy taste.
If you find more pumpkin recipes, please please post them! I have about 3/4 of an opened can of pumpkin so I need to use it up but can't decide what to make with it.
Pumpkin and yogurt....hmmmmm....interesting. I don't think I'm ready to start baking anything yet, baked goods and I get along way too well...LOL Glad they turned out nice. The sandwich sounds yummy too!
hey you baked thats cooking.. sort of.. I am not big on spice cake but I use pumpkin in my instant oatmeal and its pretty darn good with a dollop of Reddi whip.. I add some nutmeg, cinnamon about two heaping tablespoons of pumpkin.. I use Quaker Weight control oatmeal.. any flavor.. mix that together.. after nuking for a minute or two I had a sprinkle of splenda and a dollop of Reddi Whip.. pretty tasty too..

Glad they turned out well and that you enjoyed your kitchen adventure day. You're getting downright domestic, there, girlie! :-) And you know, way to go taking the remainder to work. I'd have been tempted to just eat them all myself...

I don't know any lo-cal pumpkin recipes (which I love, btw)
My favourite recipe is for Pumpkin Patch Bread and it is to DIE FOR!! Lots of spices which make the house smell really nice.

Pumpkin oatmeal...pumpkin muffins...pumpkin yogurt...I even did "pumpkin cocoa" which was basically a mixture of about 1/4 cup pumpkin to a cup of skim milk and sweetener, pumpkin pie spice and vanilla warmed up.
Oh, god. Definitely time for my evening snack! Those pumpkin bars look darn good. As for the coleslaw, I'll take a pass on that, but I did laugh when you realized you could make your own. :D

Also, on a side note I also read your monday makeover on forgiveness and have given it a ton of thought. It was a really good entry. Your right we do need to be more gentle to ourselves and our self concept.
I also think that before we forgive ourselves we have to accept and love our old selves with all of our flaws.
