Casa de Tippy Toe and Other Happenings
Not to alarm anyone, but I cooked! With heat and everything. Granted, not Cordon Bleu fare. Just simple taco salad. And I do mean simple: lettuce, tomatoes, taco beef, a smattering of cheese, some sliced black olives, and Pancho's taco dressing. I also sprinkled a few crumbled blue corn tortilla chips on top and had a few along side with some salsa.
I lovelovelove Mexican food, both the real thing and the more Cam-Mex-ican variety, but I tend to overdo on the chips and dip so I rarely have it. Taco salad is a good way to get the spicy, meaty flavors without a bunch of calories. Plus, the good thing about the blue corn chips is that I only want a few. I could eat an entire bag of the yellow corn chips. But that would be wrong.
The taco salad was an excellent dinner last night and delicious as a re-heat for a combo lunch/dinner this afternoon, but I'm done with it for a while. I froze individual portions with the leftover taco beef for next week and the week after.
In other news, I'll be sporting new kicks on my next walk!

According to the salesman, my Mizunos still have some life in them but I'm not loving the feel of them on longer walks. I'll still use them for my running about town and zoo walks and such, but for my intentional exercise, I'm going back to Asics. I love the way they hug my feet.
As an additional treat for embarking on my Tippy Toe 500 challenge, I treated myself to new socks. Yeah, yeah, I know. I have loads of socks already. But these are low cut (no tan lines!) with a little tab thing that pokes up in back to keep them from sliding down like my other low cut socks did.To compensate for the splurge, I'm putting my perfectly good Thorlo low-cuts in the donate bin.

Oooo I love your new kicks! So cute!
Taco salad sounds very tasty and good for you too. I just bought some new shoes too, I love them. New shoes, and apparel always makes me want to run or walk more often. The asics and socks look great!
OMG, I just read the first line and fainted! Now that I've recovered from that... I just finished reading the rest of the post. Love the new kicks AND socks! I love new socks! I really need to get some...
Blue corn chips? Hhmmm. After reading your post a while back about socks I bought a few pairs of low cut ones which have now officially become my running socks that only get worn on running days. I love them so much I think they add a spring to my step. I hope you get as much joy out of your new ones as I do!
Well done for cooking! What do you normally eat if you don't cook?
Love the new shoes and socks!
LOVELOVELOVE the new shoes.
you and I are kitchen alike.
entirely.
the fooooooodie bloggers have no worry Ill ever accidentally duplicate a post of theirs :)
Mexican food is always a temptation for me. Your salad sounds great, I like the idea of adding black olives, I'll have to try that next time!
Taco salad is a huge favorite around here.
I have to skip the chips completely (still a little weak there) but load up the lettuce with black olives, taco meat, chopped tomatoes, black beans, corn, green onion, diced red bell pepper an lots of salsa. If I have any - avocado adds a bit of luxury.
Enjoy your new socks & shoes!
I love asics. I need a new pair. I try and change mine every 4-6 months. A very expensive habit. lol but so important.
Okay... I gotta get myself some athletic socks.
Nice shoes! And I love Mexican food, yummy.
Need new socks and--do you like the Mizuno's? I've been wondering about those.
BTW, you are an awesome writer and I know that one day I'll be saying "I knew her when..."
I used to love writing and am actually considering doing some children's books. Hurray for light bulb moments :)
Oh man Cammy, now I want a Taco Salad for lunch instead of a Turkey Sandwich. I'm from Central "HOT" California girl, Mexican food is my middle name and I know how to cook it all too, darn shame when I can't have it all. How did the yard sale go? Love the shoes and your new sockies! Linda
LOVE Mexican food and taco salad. Where do you get Pancho's taco dressing? Also thanks for the unclutterer website. I'm enjoying it already. Now I just need to implement some unclutterer concepts!
You have a stove??? :-)
That meal sounds really good Cammy, and like a good idea for this weekend.
Was this something you saved for next April 1st and just accidentally posted today?
Well, even so, taco salad sounds like a perfect lunch idea that I'm gonna steal. Add some black beans simmered in a little epazote and crumbled queso fresco and sliced poblanos...oh yeah, I'm there.
Those socks are cool, especially the tabs. I've been neglecting my poor feet and they do most of the work. Not good.
Love the new shoes & socks! I need to replace my jogging shoes! My feet keep changing so it is always a struggle with wide, flat & bunion feet!
Man, I am a blue or red chip person! I try to stay away from those babies!!! Good that you froze leftovers for later! I am not a huge Mexican food fan but love the chips, salsa & margaritas! :-)
Busy times right now so will checkout the links at a later date. They look interesting!
those ARE cute shoes! wow:)
Lots of new treats for your feets!
I'm still snorting about your "Your sister in Cheetos" signature line on my blog. :-D I resisted them twice today while shopping and made it out of the store without them!

New shoes and new socks, way to go girlfriend.
Yup, if your going to do mexican, you gotta do it yourself. I love mexican.
Hey, if I knew how to get to your house, I'd come to your garage/yard sale. I know it will be the best one ever. LOL
Yay for cooking! I finally splurged and bought some cushion socks for long walks and running. They are faboosh! I don't know how I refused to buy them for so long.
