Chocolate-Coated Cammy

We haven’t even made it to Christmas weekend yet, and I’m already over the whole chocolate thing. Yesterday was a potluck thingie/sweet treat exchange, and I used up my entire chocolate quota for the season. Tonight I’m back to my yogurt “sundae” with hopes that I’ll rebound slightly for the weekend. :)

For my contribution to the sweet treats, I went with total decadence.

Oh, c’mon, you could at least act surprised! :)

First up, a recipe I’ve heard referred to as Redneck Toffee, Ghetto Toffee, and Christmas Crack–none of those really invoke the holiday spirit, so I’m following the lead of the folks at Deep South Dish and calling it Chocolate Toffee Bark. (This is DSD’s photo via my Pinterest account.) If you dare, you can click on the link for the recipe. My only addition was chopped pecans across the top.

Super easy to make and very rich and decadent. Definitely a case of “a little dab will do ya.” Wish I’d followed that. :)

My other treat was equally tasty, but very, very messy to make. I found this recipe for Chocolate Covered Peanut Butter Rice Krispy Balls on the Homemaking Fun blog. (Link is for the recipe.)

I chose this recipe because I had all the ingredients on hand, including a whole box of Erewhon Brown Rice Cereal I got f-r-e-e, thanks to a coupon from Attune Foods. I think if I make these again (maybe in 2013 or 2014), I’ll cut the amount of powdered sugar in half, at least, and omit the butter completely. Maybe I’ll replace it with honey. Yum!

If you should make these (and I’m not saying you should), definitely put the mixture in the freezer for a while before you try to roll it into little balls. It’s much less messy that way. :)

After all that nibbling and tasting, I waddled into the gym today for a much needed strength-training workout. This was after I walked for about two hours while my car was in for repairs. The garage is on the edge of a huge shopping area, so I brisk-walked the parking lot and dashed into a few stores. I didn’t buy anything, which was a good thing considering the bill for the repair (Ouch!), but I enjoyed the movement immensely. Between the walking, the gym, and healthier meals today, I feel more like me. :)

  4. I rather like Christmas Crack! LOL Toffe is a weakness, especially if it comes from Swiss Colony, I’m a goner. That looks wonderful. A tip on the balls, use a cookie scoop. I used it to make several things that have been annoying to ball up in years past and wondered why I didn’t do it sooner. (Plus if you’re calculating nutritional info, all of the servings will be as close to equal as possible! Yay!)

  6. We haven’t baked for Christmas yet. The recipes have been chosen. It’s just been a bit hectic around here, so John and I will have to get moving – or just John if I need to leave for a couple days. We are hosting dinner on Saturday.

  8. I made “healthy” chocolate bark by using Ghiradelli dark chocolate, almonds, pistachios and dried cherries. Super easy to make. I gifted all my friends and my kids. My son told me it was so good I should sell it! I find that if I allow myself a treat now and again, I don’t go crazy during holiday times. I only allow myself a sweet treat on the weekend, so I take one piece and then the leftovers go into the freezer in the garage.

  9. Totally funny title. And I was feeling exactly the same tonight. Two days and I’m already done ‘indulging.’ Tomorrow’s plan is a nice healthy eating day, and LOL, a waddle into the gym for a ‘last chance workout’ before I leave for Texas and MORE Christmas festivities. So good to hear someone I look up to indulges a little more than planned.
