When I first found my beloved Kitchen Aid Mixer, I knew it would come in handy for the the three times a year I actually get to bake, and I knew I could use it to whip up egg whites for protein pancakes (the only use I seem to have for whipped egg whites, given that lemon meringue pie is not a frequent option), but I never thought it would come in handy for making Mexican Chicken. Since I make Mexican chicken about once a month, you can imagine my delight when I read on Simple Healthy Family that I could use my Kitchen Aid Mixer to shred the chicken for me!
Yeah, it sounds great, but does it work?
Time Elapsed: Less than a minute!
With the mixer shredding the chicken and my new Oster Blender Stick thingie smashing the beans, this easy dish is now even easier! All I need is some tip or trick for dishing up the individual containers of chicken and one for washing the slow cooker to make this completely effortless.

I’ve often considered using my blender (no coveted Vitamix in my future — lottery tickets accepted) as a food processor but always wondered if stuff would get stuck in the bottom and I’d be left digging it out, which would agitate me. But this looks like it worked perfectly. And I like your Mexican chicken recipe. In fact, I was trying to figure out what to make in my brand new Crock Pot I received for Christmas. Last weekend, I made chili for the week. And now this weekend, I think I’ll make this.
All I can say is I gotta get me one of these. Actually both things you mentioned as I’ve been on the lookout for one of those hand blender thingies too. Maybe my “surprise” today will be to walk in the thrift store and find BOTH!!
Oh man if I had more counter space, I’d be doing this one all the time but it’s good to know especially if I end up doing BIG batches of chicken that fork shredding starts to get tedious.
Sweet! We call ours the tool of the devil because of all the wonderful things we can make with it. Now add one more task!
Wow! That is yet another reason I love my Kitchen Aid. I only wish I had read this yesterday. I made the most awesome chicken speghetti last night and I think shredding the chicken would have only made it more awesome!

Good question, Amy. Since you can shred beef and pork roasts with two forks, you should be able to shred them in the mixer But I don’t know that for sure, so proceed with caution. (And report back if you try it, please!

What a great idea, just wish I had a KA mixer! Someday. I keep hoping I will win one on a blog giveaway. I just can’t justify it right now with all the other toys I have!
