She’s Ba-a-ck! The Snacking Road Ninja Returns

Just when I thought life was settling down again, another road trip pops up! Funny how that works out sometimes.

But I’ve set the alarm for dark:thirty and should I actually hear it, I’ll travel from the southwest corner of Tennessee allll the way to the farthest northwest corner. It’s a long drive, but I’ve never spent any time up in that area, so I’m looking forward to it. Plus, there’s the joy of being in another city and leaving my house in the care of someone else. :)

On this trip, I’m doing a little something different with my snack bag. Instead of one big bag with a bunch of stuff dumped in it, I’ve got sets of snacks for each day. This way, when I leave my room for the day, I can just grab a bag and go. No excuses, no decisions, no reason not to get my fruits and veggies in for the day.

You quite possibly recognize the carrots, banana, almonds, and apple, but you might not be familiar with the Peanut Butter Puffins, a clearance purchase that will not be repeated. I’m including them on this trip just in case I try to convince myself that crunchy caramel corn would make a fine snack. Or if I find some birds that need feeding.

I used a recipe from VeryBestBaking with an applesauce-for-oil substitution, and they’re quite tasty. So tasty that I think they’re going to stay in the room and be my dessert at the end of the day.

These muffins were said to have 100 calories for each 3-muffin serving, but I don’t think my muffins were as “mini” as they were supposed to be because I only got 30-something muffins from the recipe. Still, I didn’t use all that oil (all 1/4 cup of it), so they can’t be too caloric. I’m just counting them as 2-for-100 calories and calling it done.

I’m staying in a fair-sized town on this trip, so I shouldn’t have any problem finding healthy(ish) meals. It feels good to know I’ve got the between meals portion of the day covered, too!

    Im doing ok but the child? SHE COULD JUMP THE TRACK AT ANY HALLOWEEN SUGARY MOMENT :-)
    I just keep her set up for success.

    • LOL Today I heard a woman telling her little girl that she couldn’t buy any candy because she’d be getting more Halloween candy than she needed in a few days. I swear, the little girl’s eyes sparkled. :)

  3. I love how you have things packed up and ready for each day. A great plan for success. I do love me some pumpkin muffins. Oh those peanut butter puffins can be like crack for me!

  4. I do have some almonds and protein bars in my glove box and bike bags for my brief road trips!

    This weekend I made some amazing Pumpkin Chocolate Chip cookies and my plan was to give them (mostly, left some for hubby) away to the ladies at the bank and at work!!

Had a great (and badly needed) hike yesterday, but you better believe my radar kicked in about the time you were passing through and reminded me I’d given up some “Cammy” time which would have been equally therapeutic! Hopefully, soon! Love the pumpkin muffins – may try that one this afternoon as I’ve got some leftover pumpkin I need to use!

  6. As much as I travel, I have not done the daily snack bags. Great idea. That’s not all you eat during the day, is it? I think I’d be so hungry. Although I don’t eat bananas. Maybe they hold you longer.
